Commercial Drive Blog – Merchants Workshop
A savoury staple ‘On the Drive’, Merchants Workshop is a fresh rebrand of what was formerly known as Merchants Oyster Bar located on the northeast corner of Commercial at Gravely.
“Well we’ve never really been living up to the term ‘oyster bar’ in true title when you look at the style of food that we’ve been producing and the beverage program that we’ve been executing,” says Owner/Chef Doug Stephen.
“We thought that it would be more representative of what the restaurant was so we did a name change a few months ago and about a week after that, there started to be some negative publicity around oysters for the second time in the last few years so we decided to transition to focus on our restaurant food program.”
Needless to say the transformation has been a phenomenal success.
“We have literally just gotten busier and busier and it’s allowed us to fulfill our end of calling ourselves ‘The Workshop’ as constantly trying to change, innovate and pushing ourselves as well as focusing on locality and seasonality.’
Being both owner and chef, it would put Doug Stephen in a rather enviable position in working with his team as they further creative amazing dishes.
“We have a very low staff turnover, “ he says, “and to me that’s indicative of being a fun place to work and that we do take care of our crew pretty well.”
Constantly incorporating new flavours, fermentations and the like, Merchants Workshop has quickly emerged as a “must visit” dining or sipping spot ‘On the Drive’.
